Marc grew up in New Braunfels, TX and what was then a sleepy little Hispanic and German town eating and being formed by food and the people that he loved. It wasn’t until later in life that he realized how much this experience helps define who he is as a cook and a person. Marc cooks, eats, studies, reads about the foods of South Texas and Mexico on a daily basis, because it is the food and culture of his childhood and a driving force in his life today. Juan Quixtan - Chef de Cuisine
After working in many restaurants in OKC, Juan came to Iguana day one. His Passion for Mexican Food has consistently kept him reaching for better dishes. His love for food is only surpassed by his love for soccer.
KEITH EDWARDS - MANAGER
Keith has worked in the restaurant industry for over 20 years, and has been managing them for the last twelve. His determination to make sure every customer is happy and well-treated inspires everyone at Iguana. When he's not here at the restaurant, he's relaxing at home with his wife and telling dad jokes to his two wonderful daughters.
SHANE MELTON - BAR PROGRAM MANAGER
With numerous mixology competition awards on his belt and twelve years behind the bar, Shane oversees our ever-evolving menu of special margaritas, cocktails, tequilas, mezcals, y cervezas. If he says "Here, try this," you should listen. When he's not slinging drinks, he's playing with his cats or pretending to work on old trucks.
